William Lyle - Executive Chef

Chef William Lyle has been cooking professionally in Northwest Arkansas for eight years. Originally from Nottingham, New Hampshire, he decided to make Northwest Arkansas his permanent home after completing his degree at the University of Arkansas. His cuisine reflects a unique combination of his culinary experience with an emphasis on gourmet Southern dining. Chef Lyle's menu also integrates his knowledge of Indian cuisine, gained from years spent in Northern England, and his training as a chef on the East Coast.

Heather Miley - Event Coordinator

Heather has worked in the hotel and restaurant industry for over twelve years. She was born and raised in northwest Arkansas. After completing a BA at the University of Arkansas, she has worked in many of the areas best restaurants. She has managed Ella's Restaurant for two years and recently took the position of Director of Special Events here at the Inn. In 2007 she traveled to the Mediterranean and spent some time in Italy's wine county. This spurred her interest in wine and in her time at Ella's she has continued her wine education and has completed level two of the intermediate WSET program.

Cody Johnson - Pastry Chef

Cody Johnson has been in the restaurant industry for 13 years. His primary inspiration to cook came from the home cooked, made from scratch meals his grandmothers made, utilizing fresh produce from their own gardens. It is with these rustic, soulful methods that Cody proceeds to create his own recipes and flavors, using the freshest ingredients, including organic stone milled flours. In an age where off site baking has become the norm, Cody bakes all of his breads using traditional artisan methods daily. From ciabatta and marble rye to sweet and savory tarts, every loaf of bread and dessert is made from scratch, keeping with the traditions imbued in him in his youth, while keeping an eye on the future. It is Cody's goal to build a reputation for Ella's as the place to go for baked goods that recall fond memories of the past, while always pushing forward with new and innovative flavor combinations.

Ryan Polite - Beverage Manager

Ryan Polite has spent fifteen years in the restaurant industry. He grew up in Little Rock, and moved to Fayetteville to attend the University in 1994. While working at varying restaurants thru school, he graduated with a BS in Environmental Science in 1999. Ryan then started working in his field of study, water research and analysis, for the University of Arkansas. He found his way back to hospitality and helped open the Inn at Carnall Hall in 2003. Starting as part time bartender, he has worked his way up to Bar and Beverage manager for the Inn and in particular the Lambeth Lounge. Ryan strives to provide impeccable service and variety of quality beverages. Ryan with special events coordinator Heather Miley recently passed the second level of the Wine and Spirits Education Trust.

Jason Werner - Executive Sous Chef

Sous Chef Jason Werner has been in the restaurant industry for over ten years.  Raised in Arkansas, he attended the University of Arkansas in pursuit of a mechanical engineering degree, before discovering his passion for fine dining cuisine.  He has developed a style that reflects both southwestern and southern cuisine influences.

Brad Schmitt - Restaurant Manager

Over the past fourteen years, Brad has worked in almost every field of the restaurant industry. From washing dishes to grilling steaks, and from busing tables to management, his experience is evident. At the age of twenty one he became interested in wine. From there he went on to pass his first test for the Court of Masters Sommeliers. He now organizes and conducts the Wine Club at Ella's Restaurant.
